Sakai has supplied Japan’s chefs with blades since the sixteenth century. This santoku has a VG-10 stainless core clad in 33 layers of softer steel, hand-hammered so food releases from the blade as you cut. The 165 mm length is the classic all-rounder for a home kitchen.
The octagonal walnut handle is light, balanced slightly forward and comfortable in either hand. Each knife is sharpened by hand before it leaves the workshop and arrives in a paulownia wood box.
